BERRY QUICK BERRY TAPIOCA
Place thawed frozen strawberries or raspberries in parfait glasses. Add tapioca pudding, then more layers of berries and pudding.
FIELDBERRY PRESERVES
Prep time: 25 minutes | Cooking time: 20 minutes
3 1/4 cups whole strawberries (1qt./1 L fully ripe strawberries) 800 ml
2 cups whole raspberries (1 pt./0.5L whole raspberries) 450 ml
1 cup whole Saskatoon berries (1/2 pt./0.25L Saskatoon berries) 250 ml
7 cups granulated sugar 1550 ml
1/2 cup water 125 ml
1 box Certo Fruit Pectin Crystals 1 box
3/4 cup water 175 ml

Fieldberry Preserves - Prairie Fruit Growers AssociationMeasure berries into a large saucepan. Add sugar and 1/2 cup (125 ml) water. Mix, being careful not to break up fruit; let stand 10 minutes. Place fruit mixture over high heat. Bring to a full rolling boil and boil hard 2 minutes, stirring carefully. Remove from heat. Combine Certo Fruit Pectin Crystals and 3/4 cup (175 ml) water in small saucepan. Bring to a boil and boil hard 1 minute, stirring constantly. Add to the hot fruit and mix well. Stir and skim foam with metal spoon for 10 minutes to prevent floating fruit. Pour quickly into warm sterilized jars filling up to 1/4 inch (0.5 cm) from rim. Seal while hot with sterilized 2-piece lids with new centers.

Makes: about 8 cups (2 L).
